Hue's Tapioca Dumplings

Ingredients:

Fillings:
0.5oz shrimp
0.5oz pork belly
2tsp fish sauce
1tsp sugar
2tbsp chopped pork fat
Pepper
½ cup minced onion
1 tbsp annatto powder

Dough:
1oz tapioca starch
½ cup lukewarm water (or more if the dough is dry)
Tapioca starch to make the dumplings later
Don’t: Pour all the water into the dough at the same time. Take 1tsp each time.

Scallion oil:
2tbsp pork fat
½ cup chopped scallion

Sauce:
2cups coconut water
2tbsp fish sauce
1tsp sugar
1tsp vinegar
